Chickpea curry to activate your digestive fire

Did you know that your digestion is just as important as what you eat? The ingredients in the chickpea curry recipe can activate your digestive fire and improve your digestion process, helping your body to absorb nutrients. Perfect for a side dish, it's also rich in protein and plant fiber. Come on?

Ingredients: 2 large tomatoes, chopped into small cubes; 1 teaspoon of grated ginger; 1/4 of chopped onion; Spinach to taste — optional; 2 cloves of garlic or 1 tablespoon of crushed garlic; 1 teaspoon of ground cumin; 2 coffee spoons of red curry; 1 teaspoon of coriander; 1 teaspoon of black pepper — pepper of your choice; Salt to taste.

Fry the onion and garlic in a drizzle of oil in a pan. Add the spices and stir for 30 seconds. Add tomato sauce and chopped tomatoes. Cover and cook for 5 to 10 minutes with the remaining spices over medium heat until the tomatoes are cooked, forming a tomato sauce. Add chickpeas, spinach and coconut milk, and bring to a boil.
