Ingredients: 1 açaí pulp without sugar; 1 cup cashew nut milk; 1/4 cup frozen blueberries; 5 frozen strawberries; 1 scoop vanilla flavored protein; 1 teaspoon of xanthan gum.
Add the acai pulp, the frozen fruit and the cashew nut milk to a food processor or blender, and add the xanthan gum last. Pour the contents into a bowl, and add the topping.
For the topping, I used chopped fruit, chia, raisins, unsweetened shredded coconut, almonds, good quality granola, and dehydrated quinoa.
