Easy and heathy caponata

Eggplants combined with other foods are perfect for healthy and delicious sides or even as an entrée. The fibers found in eggplant help control cholesterol and triglycerides. It is also low in calories and rich in fiber making you feel full. This is great for the weight loss.

Ingredients: 2 eggplants in strips; 4 cloves (minced) garlic; 2 large tomatoes, chopped and seeded; 1 unit yellow or red pepper, or a mix of both; Olives to taste — optional; 1 handful of fresh parsley; 1/2 teaspoon of cumin; 2 tbs olive oil; salt and black pepper to taste.

In a skillet, add the oil with the all the ingredients, except the fresh parsley. Lightly sauté over high heat. Cover and cook on low heat until all ingredients are cooked. Add a trickle of water if necessary. When all the ingredients are cooked, add the fresh, chopped parsley. Serve as a spread or eat on top of a good quality sprouted bread.
