Nutritious and rich in minerals such as calcium, potassium and manganese, beets still find the strength to be the perfect pairing with watermelon in an exotic salad. Come on?
Ingredients: 2 cups of watermelon cut into cubes; 1 cup of boiled and diced beetroot; 1/4 cup of chopped walnuts; Arugula to taste; (refreshing sauce) Juice of 2 lemons; 10 units of mint leaves; pinch of salt; 1/2 teaspoon of black pepper.
Prepare the sauce by chopping the mint leaves, and adding the lemon juice, pepper and salt in a small bowl. Add the diced watermelon with the beetroot to a bowl, and pour the dressing over the entire salad, stirring and letting it rest for 20 minutes in the fridge before serving. Add walnuts over the salad and the arugula leaves.
