Ingredients: 24 rice wraps; 2 carrots; 2 cups red cabbage; 1 small cucumber; 2 cups leeks; fresh parsley to taste; 85g rice noodles; 4 tbs sesame oil — for the cooked version; (sauce) 8 tbs coconut aminos; 2 tbs maple syrup; and half lemon juice.
Cook the noodles and let it rest. Cut all the ingredients into very thin long strips. Get a deep bowl and fill up with water. Let’s make it together.
Take one rice wrap and soak it in water a few times. Layer the carrot, cucumber, rice noodles, leek, and red cabbage in the center of the wrap. Fold into a burrito shape and repeat the procedure with another sheet of wrap.
Using a skillet, add a drizzle of sesame oil and toast on both sides until golden. For the sauce, mix all the ingredients in a small bowl and serve with the rolls.
