There are four categories of food: in natura, ingredients, processed and ultra-processed.

Ultra-processed foods involve processing steps and the addition of exclusively industrial ingredients, and we can mention instant noodles and soft drinks for example, these in turn are not considered food, they do not have direct properties with the elements of nature and nutrition. Processed foods, in turn, are composed of in natura or minimally processed foods, which have been modified for simple industrial processes such as jam, syrup, cheeses and breads. Processed ingredients are the third group, and comprise oils, fats, sugar and salt.

Finally, the icing on the diet: natural or minimally processed foods. In natura foods are obtained directly from nature, and minimally processed foods are those that have undergone minimal changes, and we can include cuts of meat and pasteurized products.

I base myself on the expression “less meat, more nutrients” (less animal proteins, more nutrients), where I focus on a natural and anti-inflammatory diet, which provides our body with what it really needs in nutrition to have vitality, energy and a full heathy reaching the Balance and Mindful Eating.

Choosing the food you are going to eat is choosing between what nature offers us, or what the industry offers us. I don't think I need to mention which side I'm on: prefer fresh and minimally processed foods that come from the earth and in addition to nourishing our body, it also nourishes our mind, and carries the energy of life, vitality.

Awareness and Balance and Mindful Eating is a choice! Choose to be aware, choose balance.
